Busby's: Where Natural Wine, Cocktails and Music Take Center Stage

 
 

Busby's, a wine and record bar, is set to become one of the neighbourhood's latest hottest spots in Paddington, Sydney – think natural wines, grappa cocktails and next-level bar snacks at the intimate and moody new Oxford Street venue.

Inspired by music-led bars found in Paris, Berlin and LA, Busby's, situated at the street level of Oxford House, exudes a moody, warm and inviting atmosphere as soon as you step through the doors.

A wine and cocktail bar first and foremost, the large, ever-evolving list of wine by the glass has been curated by Mike Bennie of P&V Merchants, and features fun and approachable drinks from Australian, French and Italian producers. Highlights include Le Juice Gamay Beaujolais, FR, and Chateau Acid Chardonnay Central Highlands, NSW.

Though Busby's is drinks-led, the bar menu is spearheaded by one of Australia’s most lauded chefs - Creative Culinary Director, Clayton Wells (ex-Automata). The share-plate style menu changes with the seasons, but always skews modern Australian in its ingredients with fresh, vibrant and unexpected flavours at the forefront. Dishes from the opening menu include Sydney Rock Oyster with Blackberry Vinegar & Roasted Kelp Oil, Chicken Liver Parfait with Spiced Pineapple and Liquorice, and Yellowfin Tuna Crudo with Grilled Watermelon and Kefir Cream.

‘At Busby's, the menu is more than just food and drinks; it's a journey through music and flavours. Busby’s is all about fun, drinking fare - there’s interesting snacks that are perfect for early evening aperitivo, through to more substantial dishes that complement some of our bigger wines. It’s a dining experience that focuses on great food cooked with quality produce, designed to be shared, and served in a relaxed setting,’ says Clayton Wells, Group Creative Culinary Director of PUBLIC.

There’s set to be a world-class cultural program in residence at Busby’s, littered with diverse and full-flavour selections from some of the finest artists in Sydney. Guests will enjoy an extended, 5-hour residency every Thursday evening with Jonti (Stones Throw Records), alongside regular sessions with iconic selectors The Santamaria Brothers and ex-Secret Sundaze London resident Millie on Fridays. Saturdays will be devoted to playing some of the world’s greatest albums on vinyl, uninterrupted, from start to finish.
